To make a delicious vegan red velvet cake, start by preheating your oven to 350°F (175°C).
Gather your ingredients. In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. In another bowl, mix the applesauce, almond milk, apple cider vinegar, vanilla extract, and food coloring.
Gradually add the wet ingredients into the dry mixture, stirring until just combined.
Pour the batter into a greased 9-inch round cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
Make frosting:
For a vegan cream cheese frosting, mix the vegan cream cheese with the vegan butter, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
Once the cake is cooled, spread the frosting evenly on top and around the sides. Decorate with vegan sprinkles if desired.
