Vegan Red Velvet Cake

Ingredients

  • cups 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsweetened applesauce
  • 1 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tbsp pure beetroot juice (or 1 teaspoon beetroot powder).

Cream Cheese Frosting

  • 1 cup vegan cream cheese
  • ½ cup vegan butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • To make a delicious vegan red velvet cake, start by preheating your oven to 350°F (175°C).
  • Gather your ingredients. In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. In another bowl, mix the applesauce, almond milk, apple cider vinegar, vanilla extract, and food coloring.
  • Gradually add the wet ingredients into the dry mixture, stirring until just combined.
  • Pour the batter into a greased 9-inch round cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.

Make frosting:

  • For a vegan cream cheese frosting, mix the vegan cream cheese with the vegan butter, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  • Once the cake is cooled, spread the frosting evenly on top and around the sides. Decorate with vegan sprinkles if desired.
