Ingredients

Crumb Base:

  • cups crushed red velvet cake
  • ½ cup melted butter
  • ¼ cup granulated sugar

Filling:

  • 16 ounces cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 tbsp cocoa powder

Instructions

  • To create a delicious red velvet cheesecake, start by gathering your ingredients. You will need 1½ cups of crushed red velvet cake, which can be made from a box mix or homemade, combined with melted butter and granulated sugar.
  • Preheat your oven to 325°F (160°C) and press the crumb mixture into the bottom of a greased springform pan.

Filling

  • Beat together cream cheese, 1 cup of sugar, and vanilla extract until smooth. Incorporate the eggs, one at a time, and add sour cream and cocoa powder for flavor and richness.
  • Pour the cheesecake mixture over the cake crumb base and bake for approximately 55-60 minutes, or until the center is set but slightly jiggly. Allow the cheesecake to cool at room temperature, then refrigerate for at least four hours or overnight for best results.
  • Once chilled, you can top it with a cream cheese frosting or a simple dusting of cocoa powder for an elegant finish.
