Red Velvet Cake

Ingredients

  • 2 large eggs
  • 1 tsp 1  tsp vanilla extract
  • cups all-purpose flour
  • cups granulated sugar
  • 1 tsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup coconut oil
  • 2 tbsp red food-colouring
  • 1 cup buttermilk (at room temperature)

Cream Cheese Frosting

  • 4 ounces butter, unsalted
  • 8 ounces cream cheese, low fat
  • tbsps castor sugar

Instructions

  •  To make a delicious red velvet cake, begin by preheating your oven to 350°F (175°C). Grease and flour the pans.
  • Gather your ingredients. In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder. In another bowl, mix the oil, buttermilk, eggs, food coloring, and vanilla until well combined.
  • Gradually incorporate the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix. Divide the batter evenly between two greased and floured 9-inch round cake pans.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

To make the cream cheese frosting:

  • While the cakes cool, prepare a cream cheese frosting by beating together the cream cheese, unsalted butter (softened), sugar, and vanilla extract until smooth and creamy. Once the cakes have cooled, place one layer on a serving plate and spread a generous layer of frosting on top.
  • Place the second layer on top and frost the top and sides of the cake. For an elegant touch, you can decorate it with red velvet crumbs or chocolate shavings.
