Ingredients
200 g spaghetti100 g pancetta3 large eggs50 g grated parmesan cheese50 g grated pecorino Romano cheese2 cloves garlic, mincedpinch of salt and black pepper, chopped parsley, garnish
Instructions
Start with cooking spaghetti in salted water until it is al dente.
Meanwhile, in a separate pan, (pancetta) crispy bacon is fried until it is golden and crispy. Once the spaghetti is cooked, it is drained and then added to the pan with the bacon. Toss everything together to combine the flavors.
In a separate bowl, eggs, grated Parmesan cheese, minced garlic, salt, and pepper are whisked together to create a creamy sauce.
Then remove the pan from the heat and quickly stir in the egg mixture., allowing the residual heat to cook the eggs into a luscious and creamy sauce.
The dish is finished with a sprinkle of black pepper and chopped parsley for a touch of freshness.
Serve immediately to savor the flavors at their peak, sprinkling with extra grated cheese and freshly ground black pepper for an extra burst of flavor.
