Ingredients

all-purpose flour

cornstarch

baking powder

tsp.
salt

butter
1/2
cup
honey
1/4
cup
granulated sugar

tsp.
vanilla

eggs
3
tbsp.
apple cider vinegar
Instructions
In a deep bowl sift flour, soda and salt together twice. Set aside.
In a separate bowl, cream together the butter, honey, sugar and vanilla. Add eggs and beat until fluffy.
Add dry ingredients and vinegar, alternately beginning and ending with dry ingredients.
Beat well after each addition.
Pour into greased muffin pans or paper cups.
Note: Generally, each paper cup can hold about 2 tbsp of mixture.
Bake cupcakes for about 20 minutes in a moderate oven at 375 degrees F.
Leave to cool then frost as desired.
Notes
The cupcakes have a somewhat golden look because of the amount of honey used in this recipe.
I found this to have a beautiful effect.
