Heat the oil in a wok or large frying pan over medium-high heat. Once the oil is hot, add vegetables and stir-fry for a few minutes until they become tender.
Next, push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until they are fully cooked, then mix them with the vegetables. Fry the onion till fragrant and light brown.
Add the cooked rice to the pan, breaking up any clumps, and pour in the soy sauce. Stir everything together, ensuring the rice is evenly coated and heated through.
Add the seasoning and continue for about 3 minutes. Finally, garnish with sliced green onions and serve hot.
