Bake unpricked pastry shell at 375 degrees F for 11 minutes. Next, sprinkle with 2/3 cup cheese.
In a separate bowl, whisk together the eggs, cream, salt, oregano, cayenne and pepper. Pour mixture over cheese.
Then bake for 25-30 minutes or until a knife inserted near the center comes out clean.
Sprinkle remaining cheese over quiche. Then top with the tomato slices, sprinkle fresh herbs, add the pepperoni (if you wish), cheese and olives. Bake until the cheese is melted. Let stand for minutes before cutting.
