Ingredients

  • ¾ cup almond flour
  • ¼ cup coconut flour
  • ½ cup sweetener of choice
  • 2 tsp. baking powder
  • 2 large eggs
  • ½ cup melted butter or coconut oil
  • 2 tsp vanilla extract

Instructions

  • Begin by preheating your oven to 350°F (175°C) and preparing a baking sheet lined with parchment paper.
  • In a mixing bowl, combine coconut flour and almond flour, ensuring they are well blended. Next, add a sweetener of your choice, such as honey or maple syrup, along with a pinch of salt to enhance the flavors. Incorporate an egg to help bind the ingredients together, followed by melted coconut oil or butter for added richness.
  • Mix the ingredients thoroughly until a dough forms. For an extra touch, consider adding vanilla extract or chocolate chips for more flavor.
  • Scoop the dough onto the prepared baking sheet, spacing them about an inch apart, as they will spread slightly while baking. Bake the cookies for approximately 10 to 12 minutes, or until they turn golden brown around the edges.
    Once baked, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
