Ingredients

  • 2 cups almond flour
  • 1 cup grated cheese
  • ½ cup raisins, chopped
  • ½ cup prunes, chopped
  • 2 eggs

Instructions

  • Gatheri the ingredients: almond flour, cheese, raisins, prunes, and eggs.
  • Preheating oven to 350°F (175°C).
  • In a mixing bowl, combine 2 cups of almond flour with 1 cup of shredded cheese, which can be cheddar or your favorite variety for added flavor.
  • Next, chop about ½ cup of raisins and ½ cup of prunes, then mix them into the dry ingredients.
  • In a separate bowl, whisk together 2 eggs until they are light and fluffy, and then fold the eggs into the almond flour mixture until everything is well incorporated. The dough should be slightly sticky but manageable.
  • After that, place the dough onto a parchment-lined baking sheet and flatten it into a thin, even layer. You can choose to score the dough into cracker shapes or leave it whole, depending on your preference.
  • Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown. Once baked, allow the crackers to cool completely before breaking them apart along the scored lines.
