Sweet pepper rice or bell pepper rice is a recipe I learnt from a friend who did a cooking course. He explained the recipe. It seemed so simple. I thought to myself how come I never thought of doing a rice recipe like that. Well, after much deliberation a few months after I decided to do the recipe and post it up for you all to enjoy.
Sweet Pepper Rice: Oh! The Colour
As you can see, the recipe ingredients for this bell pepper rice recipe is minimal and no special techniques are involved…That is unless you see turning on a stove to be a skill lol. Anyway, the star of this recipe is the sweet peppers. The colour is what gets me every time; the three colours red, green and yellow is what brings out the beauty in this sweet pepper rice dish.
I enjoyed the colour of this rice. The taste is also one I have to also mention. To me, the taste is a nice balance between sweet and salt; something common in chinese cooking. The ginger, the onions and the sweet peppers give you the sweetness to the dish. Additionally, the soy sauce balances out the salt. You should try my simple but tasty sweet pepper rice recipe and tell me what you think. Of course bend it to your will as usual. Add some kind of meat to it (I'm already thinking like chicken, beef or sausage). Add your favourite seasonings like oregano or basil…The possibilities are endless. Here's my simple sweet pepper rice recipe.
SWEET PEPPER RICE
1 cup rice
3 small bell peppers (red, yellow and green each)
1 tsp. sesame oil
black pepper
1 tbsp. grated ginger
1 tbsp. onion, finely chopped
1 tbsp. chopped chive, finely
soy sauce
2 tbsps. coconut oil
garlic, finely chopped
Heat the oil in a deep iron pot or a wok.
Add the onion, garlic and ginger. Allow to cook until the onion is soft and clear.
Add the chopped sweet peppers.
Stir and cook for 4 minutes.
Add the rice.
Sprinkle the soy sauce, sesame oil; and add salt and pepper to your taste.
Mix well.
Garnish with chive.

Ingredients

- Add the chopped sweet peppers.
- Stir and cook for 4 minutes.
- Add the rice.
- Sprinkle the soy sauce, sesame oil and add salt and to your taste. Mix well.
- Garnish with chive.

You have not specified if it is the sesame oil or regular oil or both that has to be used and you have not given a measurement for the oil.
