A Perfect Potato and Macaroni Salad

Side dishes,  such as  Potato and Macaroni Salad, add to any meal. They make a normal plain rice or even a mixed rice dish more delicious. Potato/macaroni salads? Yeah, These are the two Trini favorites when we think of a salad. It is followed closely by cole slaw.  We Trinis can't do without this side dish, especially on a Sunday, together with macaroni pie and callaloo.

Potato & Macaroni Salad: A Perfect Side Dish

This salad recipe, Potato and macaroni salad (even separate as potato or macaroni salad) makes a perfect side dish for anything barbecued (fish, chicken or pork) and, another of my favorite Trini dishes, pelau. But you can't stop there, it can also make a filling meal by itself; not to mention it makes a perfect 30 minute meal.

However, I can hear one or two readers thinking “those Trini's really eat too much carbs”. Sad to say you may be right for most folks, gladly not all. So, for the sake of those individuals who overdo it with the carbs, don't forget to toss in a generous serving of salad with your potato and macaroni salad or just organise ah lil cricket fete match to burn off those extra calories. Or, if you are by the beach there's always people playing ah lil “small goal”, just ask to join :-D…

Anyhow, don't be daunted by the amount of ingredients in this salad recipe: it's really simple. So simple a caveman could do it ….but then macaroni wasn't invented as yet hahaha lol!

I'm talking too much…..clearly. Here is potato and macaroni salad.

 Potato & Macaroni Salad Recipe

Potato and Macaroni Salad

Ingredients:

6 potatoes, peeled and boiled
1/2 cup elbow macaroni, uncooked
1/2 medium sweet pepper
2 celery stalk
1 tin peas and carrots
2 medium cloves garlic
4 tbsp Mayonnaise
1/2 tsp black pepper
1/2 tsp pepper sauce

Optional:
4 Pitted olives, diced
1 Pimento pepper, finely diced
1 tsp. finely chopped chive

Direction:

Boil the macaroni and set aside.

  • Save

Dice the cooked potatoes, peppers, and celery.

  • Save

Place the cooked macaroni, potatoes, diced peppers and celery in a deep bowl.

  • Save

Add the peas and carrots.

  • Save

Grate the garlic.

  • Save

Add the salt and black pepper.

  • Save

Add the mustard.

  • Save

then add the mayonnaise and the optional ingredients.

Mix the ingredients and refrigerate. Serve cold.

Some people like to add finely chopped onion to this salad. However, it spoils its a lot faster. For this reason, I omit it. If you wish to put, the salad should be eaten at once.

Ingredients

  • 6 potatoes peeled and boiled
  • 1/2 cup elbow macaroni uncooked
  • 1/2 sweet pepper

  • 1 425 g tin peas and carrots, drained
  • 2 cloves garlic
  • 4 tbsp Mayonnaise a low sodium, light
  • 1/2 tsp black pepper
  • 1/2 tsp pepper sauce
  • OPTIONAL:
  • 4 Pitted olives diced
  • 1 Pimento pepper finely diced
  • 1 tsp. finely chopped chive

Instructions

  • Boil the macaroni and set aside. Dice the cooked potatoes, peppers, and celery.
  • Place the cooked macaroni, potatoes, diced peppers and celery in a deep mixing bowl.
  • Add the peas and carrots, grated garlic, salt, black pepper, mustard, mayonnaise and the optional ingredients.
  • Mix the ingredients and refrigerate. Serve cold.
