However, most of the health benefits of parsley is derived in its raw state. It has been used to help cure many ailments such as kidney stones, gallstones, and ear infections. It can be used to help clean the blood, control high blood pressure, and reduce the risk of atherosclerosis and diabetes. It can also be used as a topical ointment for cuts and bruises. And, you can prevent bad breath by chewing on some raw parsley. So, go ahead make make use of parsley and reap all of its benefits

Anyway, today's recipe is parsley potatoes; it is an easy dish that's quite fitting for Sunday lunch. You could have it as a side or as a main dish with some veggies, stir fried or fresh salad, with maybe a slice of Zaboca. You don't even need meat because this parsley potatoes tastes so good.

Parsley potatoes is a dish I learnt recently, hint, and have taken a keen interest in to learn and master, so much so that when I last made it my father in law asked for seconds and gave the dish a 10… A ten, he actually gave it a ten! …For me that says a lot about the dish because he doesn't give tens that easily lol 🙂

Anyhow, here's the plan…. Try out my parsley potatoes and if it's really worth a ten then you can make it for Sunday lunch tomorrow and WOW the family.

Parsley Potatoes Recipe

Parsley Potatoes

Ingredients:

5 medium potatoes (red skin is best)
3 1/2 tbsp. parsley, finely chopped
1 large pimento pepper or 2 small pimento peppers, finely chopped
4 tbsp. butter
4 cloves of garlic, grated
Salt to taste
Water to boil the potatoes

Direction:

Wash, boil and cube potatoes. Cut into 1-2 inch cubes.

Note: For this recipe I mentioned the red skin potatoes as an alternative. If you happen use these you can leave the skin on when you cube them.

Heat pot over a medium flame and melt the butter.
Add pimento peppers, garlic and parsley; sauté until tender.

Add potatoes in 2 parts and toss until well adding salt gradually.

Note: That means add first part, toss, adjust salt. Then add second part, toss, then adjust salt again.

  • 1 large pimento pepper or 2 small pimento peppers finely chopped
  • 4 tbsp. butter
  • 4 cloves of garlic grated

  • Salt to taste

Instructions

  1. Yes, the lemon juice will overpower the delicate flavours of this dish. But I’m all for experimentation lol!!

    Let’s see…Why don’t you try adding it first to the melted butter and then continue with the seasonings? It may work there but not too much maybe 2 tsp. Write me and tell me how it comes out 🙂
