Oat Bran Muffins

Oat bran muffins is one of the many types of muffins I make. I love muffins! I have tried them in many ways. They are so easy to make and can be adjusted to suit your own tastes. There are plain muffins, coconut muffins, bran muffins, cornmeal muffins, orange muffins, raisin muffins, and carrot & cheese muffins. They can be topped with sugar, raisins, etc.

This recipe is an oat and bran muffins – an excellent choice for getting fiber in your diet. The oat and bran cereal mix is perfect for this recipe. However, you can use equal amounts of bran and fine quick oats. They are great to eat for breakfast or lunch. They are like quick breads, and once they are not too sweet, you can top them of with a little cream or jam.

OATS AND BRAN MUFFIN

Ingredients:

1½ cup sifted all-purpose flour
¾ cup oat and bran cereal
1 tsp. baking soda
½ tsp. baking powder
¾ cups sugar
½ tsp. nutmeg
½ cup raisins
¾ tsp. salt
1 cup evaporated milk
1 tbsp. vinegar
1 egg, well beaten
1/3 cup olive oil or melted butter
1 tsp. vanilla


Directions:

Pour the vinegar in the milk and allow to rest for about 5 minutes. Then add the vanilla essence and mix well.

Combine the egg and oil or butter.

Combine all the liquid mixtures and pour into the oat and bran.

Sift and combine the flour, baking powder and baking soda. Add the nutmeg.

Add the flour and raisins to the oat and bran liquid mixture.

Mix quickly until moistened.

Drop batter into greased muffin pans, filling each 2/3 full.
(note: this recipe should yield 12 muffins)

Bake in a preheated oven 424F for about 20 minutes.

  • 1 egg well beaten
  • 1 tsp. vanilla extract
