This is not a common recipe for mango, but an interesting one. I say interesting, because I have never tasted a mango cake before – and never really thought of making one. You see, like many people I am accustomed to eating the mango fruit as is; not as an ingredient in a recipe.
Become Adventurous, Try Making a Mango Cake
Some people think any mango recipe is a waste of the mango fruit. They would not drink a mango juice, make a sorbet with mango, or even bake a cake with mango as one of the ingredients. However, I thought that if there is so much mango around, why not include it in some recipes. So I invite you readers to be adventurous in cooking as well.
Mango Cake Recipe
When I was given this recipe by my sister, I had to try it. Of course, I made some slight changes in the recipe. This mango cake recipe is very easy. I believe the best mango for this recipe is Julie Mango and the mango should not be too ripe. If it is too ripe, the cake could be overpowered by the mango flavor and not everyone would delight in that taste. Unfortunately, I could only get Governor Mango, a huge mango with a distinctly sweet taste. The mango is pureed before it is added to the recipe. Here is mango cake…
1 cup sugar
1 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
2 eggs, well beaten
1 tsp. vanilla
1 – 1 1/4 cups mango puree
1/2 cup chopped walnuts
1/2 cup raisins (Optional)
1/4 cup butter
2 cups flour
1/2 tsp. lime rind
Cream Cheese frosting
1/4 cup of butter
1 cup cream cheese
2 cups icing sugar
Sift the flour. Mix flour, cinnamon, baking soda and salt. Set aside.
Mix the mango puree, sugar and butter.
Beat the egg.
Add lime rind and vanilla.
Mix the beaten eggs and mango mixture.
Then combine all ingredients together.
Mix well and pour into prepared 9″x11″ pan and let sit for 10 minutes. Bake at 350 degrees F for 40-45 minutes.
Frost with a cream cheese frosting.
The cream cheese frosting made the mango cake taste delicious.
To make the cream cheese frosting blend together 1/4 cup of butter, 1 cup cream cheese and about 2 cups icing sugar.

- Frost with a cream cheese frosting.

I’ve not tried this but when I bake with mango it does not taste like mango at the end and I don’t particularly care for it. Could you comment on the taste when the cake is done
Sure, you get the taste of mango especially how we used the Governor Mango but it wasn’t a taste that you would get tired of. It also depends on the type of mango you’re using too.

Can you use other mangoes other than what you specified? I assume Julie and Governor mangoes are in Trini.
Of course you can, use your favourite mangoes for the cake.
