The Best Eggless Chocolate Cake

At every special occasion, there is most likely a cake. There is always a cake for birthdays, weddings, anniversaries, and family gatherings. Christmas is no different. During Christmas, there are many types of cakes we make, though the most popular are sponge cake and the black fruit cake. 

Chocolate cakes are not so popular during the Christmas season. I mean, there is hardly a cake that could trump a tasty black fruit cake. That is why I can bravely say that this eggless chocolate cake could knock the black fruit cake from its pedestal. Okay! Well, maybe temporarily. Here’s why.

What is special about this chocolate cake? Everything. It is an eggless dessert.  It is extremely easy to prepare (it is prepared in less than 20 minutes).  You will find the cake filled with lots of tasty chocolate goodness. The important ingredients are chocolate powder and Hershey’s semi-sweet chocolate kisses.  You see, a chocolate cake is a special cake.

The  Making of Eggless Chocolate Cake

This eggless chocolate cake is a kid friendly recipe. Each step is simple. The steps does not include creaming of the sugar and butter, yet the cake is light and gives a beautiful smooth cut. Instead, the butter is melted – please do not let it boil. The butter and the Hershey kisses melt easily.  You can use the heat of the pot to help the butter continue melting when it reaches softens.

Cakes like this are made the same way quick breads are made. The liquid ingredients are combined and poured into the dry ingredients. That’s it!  You see, it is quite a simple recipe.   Here is the method to make this eggless chocolate cake. Enjoy!

Eggless chocolate cake

EGGLESS CHOCOLATE CAKE

2 1/4 cups less 1 tbsp. all purpose flour
1/2 cup unsweetened chocolate powder
1 tbsp. chocolate powder
1/2 cup of Chocolate powder
5 tbsp. corn starch
2 tsp baking powder
1 tsp baking soda
2 tsp. cinnamon
1 cup condensed milk
1 cup evaporated milk
2 tsp. vanilla essence
1 cup melted butter
1/8 cup brown sugar (optional)
1 tsp. cinnamon
Semi sweet chocolate

Direction:

Preheat oven to 350 degrees F.  Line with wax paper, grease and flour a cake pan (a deep 8 inch round) with unsweetened chocolate powder. Set aside,

Sift three times together the flour with the cornstarch, baking powder, baking soda,
1/2 cup chocolate powder and cinnamon.  Set aside.

Place the butter in a small pan Add the one tablespoon of chocolate powder.

Add 3 tablespoon of chocolate kisses to the butter.

Melt the butter on the stove top, do not let it boil. Cool to room temperature.

Combine well the condensed milk, evaporated milk…

…melted butter, almond extract and (if used) the sugar.
Fold in the liquid mixture into the flour mixture. Mix well.

Pour into the lined and greased cake pan.

For an extra chocolatey surprise, sprinkle (to your liking) some semi-sweet chocolate kisses on the top as well.

Place the pan in a preheated oven, 325 degree F.  Bake for about 45 minutes, until the cake is golden brown. and a toothpick, when inserted  in the center of the cake, comes out clean.  Allow the cake to cool before serving.

The cake can now be removed from the pan, slice and serve.
