Here is a recipe that almost everyone can definitely enjoy, Eggless Cake. Why did I say that? Allergies limit us from so many things: a walk in the park, having pets, certain foods etc., that it can sometimes make some people seem almost antisocial for fear of their allergies “acting up”. For children who are extremely sensitive to some type of food, it could also make them feel lonely or alienated. Many times recipes are not prepared with the food sensitive person in mind so again, I decided to do another type of recipe that would cater for another crowd. This recipe, though still not perfect for everyone, still attempts to please more people.
An Eggless Cake?
This eggless cake recipe is just as its name implies – egg-less. Eggless for those hypersensitive to eggs. Everything else in a regular cake recipe is here as usual. However, if you tasted it you would not even know it is egg-less. Well, unless someone told you 🙂
A Basic Recipe
The recipe is very basic, so this means that there is a lot of space for innovation and experimentation: something you all know I like. You can add nuts or dried fruits to make it extra special. Just remember that it is a somewhat crumbly cake, so try not to add too much nuts or fruits or the cake would be too heavy.
Some Ideas
As an innovation to this cake recipe, some people sprinkle dried fruits sparingly on the pan before pouring in the batter. This adds some interest to the cake, and once it is baked it is flipped over and cut. You could also arrange the fruits in any design you like and then carefully pour the batter: I can see some of you all trying a Christmas tree for this one lol!
You can also add the fruits within the cake. Just fold in a generous amount of fruits into the batter and bake. Again not too much to make your cake crumbly! If you like you can frost your eggless cake as well. The smooth crust makes it very easy to frost.
This eggless cake recipe is simple, and preparation takes as little as 15 minutes. This tops any regular cake when you are considering time spent beating that butter, sugar, and then the egg. Eggless Cake
Ingredients:
2 1/4 cups less 1 tbsp. all purpose flour
5 tbsp. corn starch
2 tsp baking powder
1 tsp baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1 can condense milk
1 cup evaporated milk
1 cup melted butter
1/4 cup confectioner's sugar (optional)
2 tsp. almond extract
Direction:
Note: Some people like sweet cakes. This cake is mildly sweet. If you want a sweeter cake, I believe the optional confectioner's sugar will do just well. It will blend easily in the cake batter.
Sift twice together the flour with the cornstarch, baking powder, baking soda,
nutmeg and cinnamon.
Combine well the condense milk, evaporated milk, melted butter,
almond extract and (if chosen) the sugar.
Fold in the liquid mixture into the flour mixture. Mix well.
Pour into a lined and grease (deep 9″ round) cake pan with wax paper.
Bake in a preheated oven, 325 degree F for about 45 minutes or until the cake is golden brown and a toothpick when inserted, in the center of the cake, comes out clean.
Remove and cool before serving.
