The Best Deviled Eggs Trinistyle

I can vividly remember the first time I had deviled eggsā€¦.It was my cousinā€™s birthday and all the neighbourā€™s children were invited. We played as usual because we had energy to burn. We played catch and ran about until we were just about sweaty. Calypso music played in the background but we didnā€™t care too much for the music. Who has time for music and dancing when youā€™re having so much fun? It was a celebration and all we could think of was play, play and more play. Then the snacks and birthday cake would be ready and it would be time to singĀ  Happy Birthday.

Deviled Eggs: A New Experience

After the singing it was time to eatā€¦And you know I love meh belly!ā€¦ā€¦ There it was, all neatly arranged on a serving platter. The eggs looked all pretty and colourful and I knew I just had to taste itā€¦ā€¦.. One bite and I was sold. The centre was creamy, punctuated with specks of fresh triniĀ  herbs.Ā  It wasnā€™t too long before I asked for another since it tasted so niceā€¦

It was late ā€¦The party was finished by then and as I walked home with my brown paper bag with popcorn, sponge cake and sweets all mixed into one mass { ever had sponge cake with popcorn? lol!! } All I could think of were the stuffed eggs I had and how delicious they tastedā€¦.

For years I knew these as stuffed eggs and it was a logical answer for me. The hard boiled eggs were stuffed with a paste made with the egg yolks so the name stuffed eggs rested in my mind peacefully. That was until I started cooking and I came across the term deviled eggs. ā€ Oh! Itā€™s stuffed eggs theyā€™re talking aboutā€ I thought to myself and so I had to rearrange the terms in my mind:

Trini Term ā€“ Stuffed Eggs
Cooking Term ā€“ Deviled Eggs

Now that I was on the same page, it was time to try my hand at making these deviled eggs and also try to make them similar to how I tasted them the first time at the birthday party. After much trial and error I finally came up with the recipe and my family canā€™t seem to have enough. So without further ado I present for you today deviled eggs trinistyle.

Deviled Eggs Recipe

Deviled Eggs Trinistyle
DEVILED EGGS

4 eggs
1/2 tsp mustard
1 tsp chadon beni, chopped finely
1/3 tsp dried parsley
1 tsp grated onion
1 pimento pepper, finely chopped (divided)
2/3 tbsp milk
1 tsp chive, finely chopped
2 tbsp mayonnaise
1 tsp garlic powder
salt to taste
1/2 tsp hot pepper sauce or more according to taste
1/4 tsp paprika (for garnishing the eggs)
2 sprigs chive, chopped ( for garnish)

Ā

Ā Boil eggs in water with 1 tbsp salt added over a medium flame, turning frequently with a pair tongs.

Note: Why do I have 6 eggs boiling? Elementary, eggs have a mind of their own when they are boiling. Some may crack and spill into the water, while others may not boil perfectly leaving the yolk in the centre. So to be on the safe side it is better to boil more than needed.

Halve the eggs, remove yolks and mash with a fork.
Add other ingredients except paprika and half of the chopped pimento to mashed yolks; Mix well.

Ā Refill egg whites with yolk mixture.

Ā Top each with some of the chopped pimento pepper, sprinkle with paprika. Serve chilled.

    Hey Felix

Love your post. A little bit of vinegar in the water when boiling eggs keeps the eggs from leaking out even if the egg cracks. Somehow it seals immediately and the eggs arenā€™t watery if they crack. Plus when you add them in when the water is cold that helps to prevent sudden expansion of the shell to prevent cracking. Keep doing what youā€™re doing man love the posts.

    Regards
    Trevor
