A Wonderfully Baked Corn Bread

The first time I tasted corn bread was from my wife…well fiance at the time. It was like a cross between a cake and some type of cornmeal bake. But it was delicious and filling at the same time. Now, ever so often, she makes it at home for us, I just can't wait for it to come out of the oven. I like it hot.

Corn Bread: A favourite

I see my father-in-law likes to cut it like a bake and put a slice of cheese when he eats it. I've tried it that way also and it really ‘cuts' good (cut- a term we use when something tastes really delicious, hence ” dat ham cutting good” – That ham tastes delicious)…. Another word to add to your Trini vocabulary :^)

As you would see in a while, this recipe isn't that difficult to make and soon you might be doing just like me; trying out your corn bread with cheese, maybe with a bit of relish , or you just might say that, that Trini has a weird sense of taste hahaha!!!!!! This corn bread is such a favourite that whenever we go by my in laws, my father in laws always asks my wife if she's making corn bread for him before we go home. Who's to complain if we stay a little while longer making corn bread, at least I have corn bread and cheese to eat without asking.

Anyhow, I do apologize for this late post but, balancing work and posting is becoming a real juggling act, not even a circus clown with one ball could do :^). So here's Corn Bread Trini-style.  I guarantee you will enjoy this quick bread.

Corn bread Recipe

CORN BREAD

Ingredients:

1 cup flour
1 cup cornmeal
1/4 -1/2 cup sugar
1/4 teaspoon salt
2 teaspoon baking powder
1 cup evaporated milk
1/4 cup butter
2 eggs
1/2 teaspoon cinnamon powder
1/2 teaspoon nutmeg, grated
1 teaspoon vanilla

Directions:

Sift flour, baking powder, and salt. Mix in the spices, sugar and cornmeal. Cut softened butter into pieces, and mix well.

Beat the eggs and add the milk and vanilla. Add the liquid to the dry ingredients and mix well.

Beat until fluffy. You get great result if you use a hand blender. Use it for no more than 3 minutes. The corn bread comes out like cake. Pour in a greased dish and bake at 300 degrees F for about 20 minutes or until slightly brown.

This cornbread looks almost like sponge cake when its done. You have got to try it. By the way, you have got to try this while it is hot with a slices of cheese. this is a very easy recipe to do, and you can prepare it using a cake mixer. This way is comes out a lot spongy.
