A Handy List of Cooking Equivalents and Substitutions

This list of cooking equivalents and substitutions will help you convert any recipe on this site to suit your dietary needs.

Baking Powder:

1 teaspoon baking powder + ¼ teaspoon baking soda = ½ teaspoon cream of tartar

Butter:

1 pound butter or margarine = 2 cups butter or margarine

1 stick butter or margarine = ½ cup butter or margarine

½ cup (1 stick) butter or margarine = 7 tablespoons vegetable shortening

Coconut:

1 cup grated coconut = 1 1/3 cup flaked coconut

Corn:

2 to 3 medium ears of corn = 1 pound of corn kernels

1 medium ear of corn = ¾ cup of corn kernels

2 medium ears of corn = 1 cup corn kernels

1 (10-oz.) package frozen corn kernels = 1 ¾ cups corn kernels.

Eggs:

2 large eggs = 3 small eggs

1 egg = 2 egg yolks (for custard)

1 egg = 2 egg yolks plus 1 tablespoon water (for cookies)

Flour:

1 cup self-rising flour = 1 cup all-purpose flour + 1 teaspoon baking powder + ½ teaspoon salt

1 teaspoon apple pie spice = ½ tsp. cinnamon, ¼ tsp. nutmeg, 1/8 tsp. cardamom

1 tsp pumpkin pie spice = ½ tsp. cinnamon, ¼ tsp. ginger, 1/8 tsp. allspice, 1/8 tsp nutmeg

Fruits:

Apples, 1 pound = 3 cups peeled and sliced

Apricots, dried, 1 pound = 3 cups

Bananas, 3 to 4 medium = 1 ¾ cups, mashed

1 cup sour cream 1 tablespoon lemon juice + evaporated milk to equal 1 cup

1 cup light cream = 7/8 cup whole milk + 3 tablespoons butter

1 cup yogurt = 1 cup buttermilk or sour milk

1 cup sour cream = 1 tablespoon lemon juice + evaporated milk to make 1 cup (let stand 5 mins)

-or- 1 cup evaporated milk + 1 tablespoon vinegar,

-or- 1 cup plain yogurt

1 cup whipping cream (for cooking) = 3/4 cup whole milk + 1/3 cup butter
