As you all may know, I am fond of all things with lots of cheese, such as macaroni pie,pizza and green fig pie. This time I have for you cheesy potatoes, another of my favorites. It tastes so good you don’t need any sauce for it, but if you like you can add a good stew chicken with it or as I tell my wife, a little cheese sauce at the side wouldn’t hurt :^).
It tastes cheesy because of the white sauce and of course lots of cheese. Some people mix the white sauce and grated cheese together before they add it to the potatoes. And others sprinkle bread crumbs over the potatoes before baking, but this is my way of making cheesy potatoes; Trini style with lots of cheese. As you can see in the picture below I still have one or two pastelles remaining so you could say that I am celebrating the New Year still. Enjoy!
CHEESY POTATOES
Ingredients:
1½ lbs. potatoes
8 ounces grated cheese
1 small onion, finely diced
2 pimiento, finely diced
2 tablespoons flour
1 cup milk
2 tablespoons butter
1 teaspoon parsley
1 bouillon cube (optional)
pepper (optional)
water
Direction:
In a deep pot, boil water for the potatoes. Pare the potatoes and dice. Place in boiling water for about 15 minutes. Strain and set aside in a large mixing bowl. While the potato is boiling, make the white sauce. The white sauce is made on a low flame. Melt the butter in a deep pan and add the chopped onions. Cook the onion until soft, for about 5 minutes. Remove the pan from the flame and add the flour and mix well.
The mixture looks like this. Add the milk and mix well again. Return the liquid to a low flame and continue to cook until the liquid is thick. Add the bouillon cube (optional). Stir the liquid every now and then. Remove from the flame when the liquid is thick and a bit creamy.
Add pimento and the parsley. Add the white sauce and about 5 oz of the grated cheese. Mix well and pour in a greased casserole dish.
Sprinkle the rest of the grated cheese over the potato. Bake in a preheated oven 350 degrees Fahrenheit for 30 minutes. Cheesy Potatoes. Delicious!
