So yuh want ah fast cook? Well here is one for all you starving people who just don't have time and want something to fill your bellies in ah jiffy. But, before I reach to the broccoli in garlic sauce recipe, you know I always have a story…….
I was out whole day the other day with my wife and didn't get home until late the evening. The children already came for lessons and I was as usual behind my computer. My mother-in-law didn't cook that day since she had some leftovers the day before. So no food …yeah ah know, big cooking website and no food cook in the house.
But that is how it is sometimes when you're busy with life. Eventually, I got up from my behind and went to the junction to get some “Chinee” food. It was a while since I ventured to buy Chinese food because I usually make at home but time was really against me and the belly was already close to ah boil. For a while also I haven't been too much of the meatitarian I usually am, and have been on a more vegan flexible diet for the past month. Yeah ah makin' up words today lol.
So let me explain. I eat a more vegan/ vegetarian diet but on the odd occasion I have a little piece of meat and that may be like once for the week which is most times fish. So that's my term for it, “vegan flexible“. If people these days could be hetero flexible why can't I be vegan flexible? lol!
Anyway, so there I was in the Chinese restaurant looking at the board, you know the one with the numbers so you could order a number one “rice, chow mein and chicken” lol, and started scanning for something different. I saw squid, shrimp and fish and my eyes lit up. There was an assortment of fish dishes that I just had to try …..
I eventually chose the fish in garlic sauce….For a while I had to wrap my mind around the garlic sauce …Not the creamy, white one you get when you order your bake and shark in Maracas Bay, but a Chinese garlic sauce.
I had a nice view of the kitchen from where I stood, so you know yuh boy had to macco a lil bit because food is meh ting. After a quick look I realized that it wasn't that hard and I couldn't wait to taste it so I decided to bypass playing ah “mark” and hurried home………
In the end, the taste of garlic with a hint of other equally enticing ingredients rolled around on my tongue as I savoured the sauce before I swallowed and my mind lit up for a second time….this was amazing! I could twist this and use it for more than one dish. Oh my! This was the start of another adventure into “we” food….
Instead of fish, I decided to start from my vegan flexible standpoint. I chose to do broccoli in garlic sauce. You could easily substitute other vegetables which I plan on doing later on and of course the fish …maybe if you're still wondering about the other meats. Oh gosh ah talkin' too much again and allyuh hungry still. Ok, here's Broccoli in Garlic Sauce …Ah hope you cook enough! 🙂
BROCCOLI IN GARLIC SAUCE
1 large bunch fresh broccoli, cut into florets (about 1 1/2 lbs)
2 tbsp garlic, grated
1/2 cup (water)
1 tbsp soy sauce
1 tbsp cornstarch
1 tbsp brown sugar
1 tsp sesame oil
1 tbsp rice cooking wine
1/4 tsp salt
1 tsp ginger, grated
2 tbsp coconut oil
4 sprigs chive, thinly sliced
1/4 cup water ( for broccoli )
The recipe is simple as follows…. Stir fry and steam the broccoli then pour the garlic sauce and let thicken. That's it basically.
In a medium sized bowl, add grated garlic, 1/2 cup water, soy sauce, rice cooking wine,
cornstarch, sugar, and sesame oil. Stir and set aside.
Wash and set aside broccoli florets in a bowl.
Heat wok and add coconut oil. Add the broccoli and stir 2 minutes.
Reduce the heat to medium and add 1/4 cup of water. Cover and steam for 3 minutes or until tender.
Note: You can still try a normal cast iron pot; just let it heat up first.
Lower the heat. Pour garlic sauce over broccoli, cook 2 to 3 minutes until the the sauce thickens. Pour over rice or noodles. Sprinkle with chive. Serve immediately.
