A Healthy and Easy Beet Salad

I am not surprised as to the popularity of this beet salad in my family.  Everyone loves the delicious addition of beet to the salad.  It had such a natural crunchy sweetness that no one seemed to mind. They did not seem to care if their plates had so much of this salad and less rice.  Or, that the red of the beet had bled on the rest of the ingredients in the salad.  No one complained.  And I was pleased.

Eating Healthy is Easy With Beet Salad

This beet salad is very simple to prepare.  All the ingredients are washed and chopped in its raw state, except the broccoli which is lightly sauteed in a little coconut oil, and then mixed.  Thus, you get as much nutrients from this fresh salad that you could ever get.  You see, too many times we eat most of our food cooked and less of it in its raw state.  We get the most nutrients from raw vegetables, so why do we always cook them? Maybe it’s tradition, but I guess some traditions have to be broken if we want a healthier T & T.

Now some vegetables do need a little cooking before it is served.  Cruciferous vegetables, such as broccoli, cabbage and cauliflower, are best eaten cooked because they contain certain chemicals that could interfere with the production of the thyroid hormones.

As you would notice this beet salad is very, very fresh. There’s no salt or any of those vinaigrette with oil and stuff. This is probably the way Mother Nature intended it to be lol!!.  And mind you it doesn’t need anything else. The sweetness of the raw beet and the carrot gives the flavour the beet salad needs.

 Beet Salad Recipe

Beet Salad

5 cups ice berg lettuce
2 1/2 cups diced cucumber
2 cups broccoli
1 1/2 cups grated beet
1 cup carrots, julienne
1 tbsp coconut oil

 Lightly saute the broccoli in the coconut oil.

  Add all the ingredients into a large bowl and toss.
