An Easy Spicy Fried Chicken

I have been enjoying the photos that many of the subscribers to the Facebook group have been posting lately. This fried chicken picture caught my eye and my interest. But, I was not the only one. When I reposted the photo on my Instagram page, many people saw it as well and started asking for the recipe. Without a doubt, I understand why everyone would be pleasantly interested in this recipe.

Elizabeth’s Fried Chicken Recipe

Elizabeth Lezama, like the many others who are longing for KFC original fried chicken during this present lockdown, is the contributor and cook of this remarkable KFC-looking fried chicken. She got creative! And low and behold, it seems like quite a success because her chicken looks much like the fried chicken we all know and love. As for taste, she made sure the taste is there as well as she made sure it was filled with many delicious herbs and spices. This is the reason she used Chief’s 11 herbs and spices. I just love what she did to make one of our favourite fast food/restaurant recipe homemade.

Easy Spicy Fried Chicken

INGREDIENTS:

1 (4 pounds) chicken
2 eggs
2 cups all-purpose flour
2 packs Chief 11 herbs and Spices
2 teaspoons paprika
2 teaspoons cayenne pepper
1 teaspoon lemon pepper
Coconut oil for frying

DIRECTIONS:

Begin by washing the chicken properly with lime to remove the freshness and then cut it into suitable pieces. Then, season with one pack of 11 herbs and spices, 1 teaspoon of paprika, 1 teaspoon cayenne pepper and leave to marinate for 1 hour.

Next, in a large bowl, beat the eggs in a shallow dish or bowl. In another bowl, combine the ½ pack of 11 herbs and spices (store away the remaining half-pack for another day). Add to the herbs and spices, 1 teaspoon of paprika, 1 teaspoon of cayenne pepper and 1 teaspoon of lemon pepper. Then add the flour to the bowl of spices and combine well.

Dip each piece of chicken into the beaten egg and drag it through the flour mixture until well coated. Repeat this action once more.

Fill a large pot or a deep fryer half full with oil and heat to 350°F. Cook in batches. Gently, place the chicken parts in and fry until dark and crisp. Fry on one side is golden brown, then turn and brown other side until the chicken is no longer pink inside and its juices run clear.

Note, the thighs and legs will take longer to cook – about 15 minutes – than the breast and wings, which will take about 10 minutes.

Remove from heat, drain on paper towels, and serve! We Trinis like our chicken HOT. Serve with some crispy potato fries and your favourite dips (ketchup and mustard).

Variation:

This extension is for those who would prefer an oven-fried chicken version.

Just place the pieces of prepared chicken in a baking pan coated with nonstick cooking spray. Bake uncovered, at 350 degrees F for 40 minutes, until no longer pink and the juices run clear.
