Lentils is one type of peas that is most popular in the Caribbean. Many people are vegetarians and this lentil patties recipe will certainly interest many. Although we are in the Christmas season celebrating, with all the meat dishes like pastelles and baked ham etc. , I feel that a day or two during the week could be meatless or limited in the amount of meat, so that the body could recover from all the food from the staff parties and dinners and limes that you attend (also with the price of groceries these days I think this will also be good for your pocket to recover ha ha! ;^) ). With this in mind and also remembering my vegetarian visitors on the site, I am posting Lentil Patties today.
Vegetarian Lentil Patties
Similar to the lentil loaf recipe posted some months ago, these patties are a wholesome substitute for meat and you will still be getting your proteins and nutrients for the day…. of course you would also be learning another way to prepare lentils. This recipe was introduced to me by my wife who was a vegetarian for seven years and cooked this and similar type recipes during that time.
More than one way to cook Lentil peas
The thing is that most people, including myself, only know how to cook lentils a few ways: stewed, curried or in a soup so this lentil patty for me is an added welcome to my mental list of recipes. The recipe seems easy enough once you have all the ingredients and tastes wonderful in a burger. To me this is another creative way of serving the same old lentil peas but I’m sure there are other Caribbean peas recipes out there that I have not discovered as yet. Healthy Lentil Patties Recipe
Lentil Patties
Ingredients:
½ lb. (approximately 1¾ cups) lentil peas
1 cup bread crumbs
1 egg
1 stalk celery
1 pimento
1 small onion, grated
2 cloves garlic, grated
3 cups water
3 sprig chive
1 tbsp. parsley
3 sprig chadon beni
thyme
1 tsp. tomato paste (optional)
salt to taste
Flour (seasoned with favorite herbs)
Oil for frying
Direction:
Cook the peas in water until soft and most of the water is absorbed. If there is still some excess water in the peas, strain the excess water and set aside.
Chop the chive, celery, chadon beni, and pimento finely. Grate the onion and garlic. Add the seasonings and the tomato paste to the cooked lentil peas. Mix well while you mash the peas.
Fold in the egg. Add the bread crumbs, a little at a time, and mix.
Mix until the lentil peas is thick. The flour is used to help bind the peas into small soft balls. There should still be a bit of moisture to the feel, not dry. Roll into small balls.
Roll the lentil balls in seasoned flour and flatten into patties for frying.
Fry until golden brown in a pot or frying pan.
Lentil patties may be served as a side dish or as a burger.. Well that’s it for another post. Ah gone! Bye!

- 1 tsp. tomato paste optional
- Salt to taste

Lentils, I have always enjoyed,in soups,salads etc…..This patties recipe sound good…I will try it and as I am a veggie person will keep on making them…..Thanks X QUERINO X
What is an egg substitute.
An egg substitute contains usually egg whites, fat free milk, food colouring, vegetable oil, and vitamins. If you do not eat eggs, you can use a powdered egg replacer, available in health food stores, and made from potato starch and some leaveners. It functions just like egg. It has a good binding, leavening properties and can be whipped until it holds soft peaks.
Can these be frozen for future use or should they be used immediately?
Store them between layers of wax paper in the freezer.

Can they be baked and I need a gluten free substitute for the flour can i use mashed potato
Not sure if it will bind the same way. But you can still experiment.
