Delicious Homemade Ginger Beer

Coming at you again with another Trini Christmas recipe; this time I have for you Ginger Beer. This is a fermented drink that is popular around Christmas time in Trinidad and Tobago and even in the Caribbean. The ginger is fermented from any where between a day to a week depending on how strong you want it. This is a drink I didn't like while growing up, but somehow I got used to its taste and now I can't get enough. I prefer to make mine than to buy the commercially made ones that are too carbonated, I believe. So as promised here I am posting my simple ginger beer recipe we enjoy in the Caribbean. Enjoy the sweet burn of a Trini ginger beer.

Ginger Beer Recipe

GINGER BEER

Ingredients:

1 lb. fresh ginger
8 cups water
1½ cups sugar (or to taste)
lime peel

Direction:

Wash and remove the skin from the ginger.

 Chop the ginger and blend in a little water. Pour into a large pot with the rest of water and leave to soak and ferment for about 24 hours or longer if you want it stronger tasting.

This is how it looks when fermented. When fermented, strain the mixture.

Add lime peel to the ginger beer and sweeten to taste.. When sweetened remove the lime peel, bottle and refrigerate. Serve chilled.

  1. Hi Felix, if I dont have a blender or juicer do i just grate it and put it to soak or do i grate, boil it, then leave it to soak?

  2. I did something wrong… mine taste funni. I did everything… left on the counter in the pot for approx 1 day and some hours and it smells funny? Could you helps as i am adamant to make a good ginger beer. First time making..

    1. I’m not sure what happened but possibly you left it fermenting too long. Once it ferments and you see the bubbles on the surface it is good. To be extra careful maybe you could use sterilised containers and water.
