A Healthy Carrot Bran Muffins

One of the first muffins I ever tasted was Carrot Bran Muffins.Ā  Baking is my wife's specialty. She could bake up a storm around me when it comes to using the oven. But then when it comes to curry or making a decent pelau, that's where I shine. Between the two of us though, we have come up with some really wholesome treats; especially when ingredients are getting scarce, coming close to end of month. You know what I mean!

Quick Carrot Bran Muffins

One evening we felt for a snack so my wife decided to make some bran muffins, since she knew this muffin recipe very well ā€“ more like the back of her hand :-). We didn't have much of anything so I went to the fridge to see what else we could add to the bran muffin recipe. Lo and behold, huddled in a corner was an apple and two carrots in a bag so she grated them and added them to the ingredients. I just had a feeling that it would come out great since I had carrot cake some time ago and that too ā€œwent downā€.

When they came out of the oven they looked and smelt delicious. The sweet aroma filled the whole kitchen. No longer was it called bran muffins but rather Carrot Bran Muffins. Of course a little later, while I enjoyed a movie that evening, I had mine with a glass of grapefruit juice. And the rest of the bran muffins? It was gone in a flashā€¦.It wasn't me. šŸ™‚


Carrot Bran Muffins Recipe

What I like the most about this recipe is that instead of the shredded carrot, any other fruit could be substituted. I think we'll experiment a bit with banana next timeā€¦ā€banana bran muffinsā€ it certainly has a ring to it. Anyhow, enjoy carrot bran muffins; a wholesome snack.

CARROT BRAN MUFFINS

Ingredients:

2 carrots
1 apple, peeled
3/4 cups sugar
1 1/2 cups flour
1 1/2 cups bran
3/4 ā€“ 1 cup milk
1/3 cup oil (olive or coconut)
1 egg
1 tsp. nutmeg powder
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla essence
1 cup raisins

Direction:

Grate the carrot and apple.

Sift the flour, add the nutmeg, baking soda and baking powder.

In a separate bowl add the bran, sugar, essence and milk. Then add the grated carrot and apple. Mix thoroughly.

Add the egg and raisins.

Then add the oil.

Lastly, fold in the flour and nutmeg.

Pour the mixture into your favourite baking pan and bake at 300 degrees F for 30 minutes.

Ingredients

  • 2 carrots

  • 1 1/2 cups bran
  • 3/4 ā€“ 1 cup milk low fat
  • 1/3 cup oil olive or coconut
  • 1 egg beaten
  • 1 tsp. nutmeg powder
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup raisins
  • 1/2 tsp. vanilla essence or almond essence

  2. Mr Felix , šŸ™‚ I baked the muffins . My cousin said ā€ Moist and soft and nice.ā€ Need I say more ? yes . I enjoyed them much and ate 2 many .
    Sorry I dont have a pic of them , Iā€™m lacking a camera .
